Homegrown Tomatoes

...there is nothing better!

Michael brought in 30 tomatoes from the garden on Monday. Now we love tomatoes, but I knew there was no way we could use all those quick enough and that if I didn't do something with them they were going to go bad. My MIL had just given me a huge container of her salsa, so I opted not to make sure. I grew up helping my mother and my Grannie put up vegetables from our gardens all the time, so I figured it was time I did the same.

I really wish I had had all the ingredients for veggie soup (made with fresh veggies from the garden, that's my fave), but since I didn't I just opted to put up the tomatoes alone. I cook with them all the time and when they're fresh from your own garden they just taste so much better than from a can.

I don't have tons of shelf space for jars so I decided to freeze them instead of can them...it's takes up less room and I have plenty of freezer space. So after the kitchen was cleaned up from dinner last night I set about parboiling the tomatoes...I had two pots going!

As they were ready I scooped them from the boiling water and put them over into dishes to cool down enough to handle...

There were times when this big baby made it hard to get to the stove, too! He has to be within 6 inches of me at all times! LOL

Once they were just warm and wouldn't burn my hands I peeled and cored them...

then into the bags they went!

In the end I had 11 quart bags full! I think my Grannie would be proud of me!
